German Helles style lagers are traditionally brewed with sort of simplicity in mind. Less is more. So we took a note from the Hobo’s life on the rails and packed lightly. One malt and one hop both of German origin finished with a clean traditional German Lager yeast.

Loads of organic Cocoa nibs from Ecuador contribute the nutty dark chocolate notes while various roasted malts fill in with additional complexity. Milk sugar adds a smooth creamy sweet body which pulls the rich malt/chocolate flavor together. Hop character is slim to none with bittering additions added for balance.

Crisp, clean, dry, all with a smooth Saaz hop flavor and finish. Easy drinking and as easily refreshing.

Our dopplebock was brewed with a double decoction mash where we remove a portion of the mash, run it through its rests, and bring it to a boil to caramelize the wort. This traditional German brewing method is difficult and time consuming but adds to the depth and character of the beer. Look for a soft yet intense malt complexity and smooth soft alcohol presence. Notes of toasty bread, caramel, and dark fruit (raisin/plum).
